If you like Pina Coladas...

I know I have had a very long hiatus from posting.  No, I'm not trying to run my life like that of a TV character and disappear from May through August.  I apologize.  But I will make up for it with a few good posts in the next few days.  Let's start with my Pina Colada cupcakes...




I first made these cupcakes in the beginning of June and they seemed to be a pretty big success.  And since I have an order for them next week, I think it's about time to show them off here on my SST blog.  These cupcakes were another flavor inspired by my cruise in May.  They are the best of a Pina Colada with no age restriction and no shame in having them before 5 PM.  


The cake for these is a fluffy coconut pineapple cake.  It has real pineapple juice in it, with coconut flavoring and juicy pineapple bites.  On top of that is a pineapple coconut cream cheese frosting, and topping that is flaked coconut.  And to mimic the real deal, each little cake sports its own brightly colored paper umbrella.  I think they make for a pretty fun summertime (or anytime really!) treat.

Black & Blue


This is quite an exciting post for me, because I am in love with these new cupcakes.  They are seriously my favorite cupcake I have created thus far (runners up would be the Chocolate Peanut Butter Pretzel, Triple Chocolate, and Cookie Dough varieties).  If you know me you probably have already heard this, since I have been raving about them since baking them on Wednesday.  




Let's start off with the cake-- it's a dark chocolate cake.  It's rich, it's decadent, and it's still moist and fluffy.  Then the frosting- my regular cream cheese frosting, but I added to it some fresh blueberries.  And topping those two gems is a drizzle of semisweet chocolate ganache.  What can't taste better with a luxurious mix of cream and chocolate on top?


I think this is my ideal combination.  The frosting is rich and creamy, and it has a slight tang from the cream cheese that is matched perfectly with the sweetness of the blueberries.  And the fruity icing cuts the richness of the dark chocolate perfectly.  Mmmmm... Suzy's in heaven.  Where I do believe cake and cupcakes abound.

Cupcake Fiesta

Since my new husband and I went on a wonderful cruise to the Caribbean I felt like I had to do a cupcake or two inspired by our tropical vacation.  Before getting back on our ship in Cozumel, I bought the cutest bottle of Mexican vanilla in the world- it has its own little knit poncho.  So I decided to try out a Mexican Chocolate cupcake.  It's a little spicy, a little sweet, and very indulgent.




Here she is on her own little pedestal, my Mexican Chocolate senorita.  The cake is made with a lot of my new vanilla from Cozumel, and it's spiced with cinnamon and just a dash of red pepper to give it some south of the border heat.  But in my opinion the best part of this one is the frosting.  It's a variation on my beloved chocolate buttercream.  But I upped the vanilla (again, from my adorable poncho bottle) and I added just enough cinnamon to make it, well, addicting.  I think everyone who tried these kept swiping more frosting to lick away.  It's creamy and rich, and just a tad spicy.  And, although it didn't show up that well in the photos, I topped them with a sprinkling of edible glitter to give them a coppery shimmer, making them ready for the fiesta.  Viva cupcakes!

L'eggo My Cupcakes!

I'm glad to be posting something again after such a long hiatus.  I do have some valid excuses, though.  A cruise (great), a wedding (really great), and a lot of working (not great, but necessary).  But now that I'm back, I have a few things to post in the next couple of days.  




It's another cupcake phase, and to start it off we have a Belgian Waffle cupcake.  I think these are just so darn cute.  The cake is a vanilla butter cake made with buttermilk, real maple syrup, and some cinnamon to give it a waffle-like taste.  It's topped with a maple buttercream that also has some pancake house flair, and the cutest part?  The tiny little waffle cookie on top.  It's a buttery vanilla pressed cookie, and I topped it with powdered sugar, just like I like on my waffles.  Would a glass of OJ and one of these pass as breakfast?  You be the judge.

Something Blue



On May 6th I will be marrying the talented young man who photographs my food for this blog (I get very good rates), and yesterday was my very own bridal shower.  Since I'm quite partial to Suzy Sweet Tooth sweets, we decided to use Suzy for my food.  I did a dessert bar with confections in the spring blues we are using in our wedding.  We had chocolate chip brownies, CocoNilla cupcakes, chocolate blossom cupcakes, chocolate covered pretzels and Oreos, mini chocolate crystal cupcakes, and a new recipe: mini Lemon Coconut bundt cakes.




The Lemon Coconut bundts seemed to be the hit of the shower.  Along with the chocolate covered pretzels, which always go fast, they seemed to be nibbled up first.  And the ladies seemed to be unanimous that those were the favorite.  They are a tiny cake made with coconut milk, vanilla, lemon zest, and fresh lemon juice.  And they are topped with a sweet but tangy glaze of confectioner's sugar and more lemon juice and zest.  Who wouldn't love that?


I am excited to do more desserts bars like this for bridal showers, baby showers, or parties.  It looks like I may do one for a wedding in August.  Time to start brainstorming...

Another Busy Stretch

I haven't been blogging much lately for a few reasons.  I have had a lot of orders lately, which is really great.  But it also means I spend more time baking for the orders, and less time creating new recipes and experimenting.  I also have an upcoming move, wedding, and honeymoon, all of which are taking up a lot of my spare time.  But there are a few notable things to mention for any customers/fans of Suzy Sweet Tooth.

Chocolate Covered Strawberry Cupcakes



I can't think of a better way to bid farewell to winter and usher in the start of spring than my newest cupcake, the Chocolate Covered Strawberry.  I know I haven't been posting a lot lately on the blog.  I've been keeping pretty busy with Suzy Sweet Tooth orders, as well as work and getting ready for my upcoming wedding in May.  These new cupcakes are the perfect thing to get me back in the swing of things.  They are super cute, super tasty, and look fabulous on my brand new cupcake stand (thank you Crate & Barrel clearance!).


The cake for these cupcakes is a recipe I just came up with today for a dark chocolate cake.  It is moist but fluffy, like my normal chocolate cake, thanks to some sour cream and buttermilk and a few other yummy ingredients.  But unlike my normal chocolate cake it is made with Hershey's Special Dark cocoa powder.  And I think I struck gold with this one-- it's so rich and decadent while still light and fluffy.  


Each cupcake is frosted with a cream cheese icing made with fresh strawberries.  It's just the right pair with the rich cake, because it adds a bright, fruity note to counter the decadence of the cake, just like a chocolate dipped strawberry itself.  On top of that is a little swirl of my chocolate buttercream.  And to finish them off is a drizzle of melted semisweet chocolate.  I love the look of the drizzle; it conjures up the image of a chocolate covered strawberry.  They look good enough to eat.  ...And they taste good enough for seconds!

It's a Celebration!

Somebody call Kool & the Gang because it's time to celebrate good times.  I'm celebrating, birthday boys and girls are celebrating, and you can celebrate, too.


Celebration for some Pisces: Here are some photos of some vanilla birthday cupcakes I made for a birthday boy named Matthew.  He and his classmates enjoyed vanilla cupcakes with my favorite chocolate buttercream and festive birthday sprinkles.  And to make sure he knows how special he is, his name was spelled out in fun fondant letters.  I will be doing another personalized birthday cupcake order on Tuesday, some fun CocoNilla and Cookie Dough cupcakes in posh black and white for the stylish birthday girl.  So make a wish you guys!




Celebration for me: I've had a busy week with a slew of orders and a few more super fun ones to bake still in the next few days.  My most exciting news is that I just gave out one dozen free cupcakes on Thursday to the lovely Bethany who redeemed my first punch card since I started them in December!  I could not be more excited about this.  Suzy Sweet Tooth is slowing but surely building some speed.  I am so thrilled to get new customers and new orders.  I hope to be able to redeem many more punch card freebies in the future.

Cake Pops

This week I made these adorable little red velvet cake pops.  They are just like my cake truffles, but they're on a lollipop stick and topped with some sprinkles.  Not only are they super cute in pop form, but they're fun to eat this way, too.  They can be made with any flavor of cake.  These are a very moist red velvet.  They are covered with a pink candy coating, but they can also be covered with milk or white chocolate.  I think they make a very cute (and delicious) bouquet in a little tin pail.

Laissez les Bons Temps Rouler!

I am neither Catholic nor Southern, but one thing is for sure... for Suzy Sweet Tooth every Tuesday is Fat Tuesday.  So, as the French would say, laissez les bons temps rouler!  Happy Mardi Gras!




These celebratory cupcakes should be gobbled up before Ash Wednesday, and because they are so tasty, I'm sure they will be.  They are CocoNilla cupcakes that are decked out in festive purple (justice), green (faith), and shiny gold wrappers (power).  With a few of these, anyone would be ready to party.

Triple Chocolate



My name is Suzy Sweet Tooth, and I'm a chocoholic.  You may be, too.  And if you're not, these cupcakes may just convert you.  A twelve step program may not be necessary, but even if it is, these are worth it.


These Triple Chocolate Cupcakes are no ordinary chocolate cupcake.  They are chocolate to the max.  The cake is a moist chocolate cake I use for many of my cupcakes, but for these I add mini semi-sweet chocolate chips to the batter.  They melt just enough to become moist little chocolate morsels in each bite.  On top each cupcake is the second chocolate level, a silky ganache made from semi-sweet chocolate and cream.  And to round out the trio of chocolate-y goodness is my favorite chocolate buttercream on top.  They are decorated with metallic white sprinkles to lure you into your chocolate coma.  Mmmmm....

Half Baked

This last Thursday was a sad day.  It was the last test kitchen day I'll have with Coco for the next year and a half.  She leaves on March 2nd to serve a church mission in Argentina.  So before she deserts me (or desSerts me...  Not funny?  Oh well.), we used our last session together to bake the treat of her choice.  And her choice was Cookie Dough Cupcakes. 

 

The idea actually came from a lovely woman named Stacy who works with my fiancĂ© at the bank.  It's a vanilla cupcake stuffed with raw cookie dough (egg-free, don't worry), and decorated with mini semi-sweet chocolate chips.  Everyone knows the best part of making chocolate chip cookies is the eating the dough.  And this is the cutest packaging for it I've ever seen.  

The cake is a basic vanilla cake, but they can also be made with chocolate.  In fact, I will be baking a batch of chocolate ones for an order on Sunday.  Yum!  The fun part is their filling-- a dollop of mini chocolate chip cookie dough.  They are frosted with a mock cookie dough frosting, similar to the frosting on the Snickerdoodle cupcake that has been such a hit.  And finally some mini chocolate chips on top as a little preview of the fun inside.  The only downside of this cupcake?  If you give a mouse a Cookie Dough Cupcake, she'll ask for a glass of milk...

Cake Truffles



I think these are really fun.  I'm calling them Cake Truffles.  They are little bites of moist cake (these ones are chocolate, but I can do any kind of cake) covered in white or milk chocolate with the alternate drizzled on top.  I'll also be drizzling them with different colors of candy coating, so I can basically do them in any color of the rainbow.  


I think these would be great party favors or little gifts for neighbors or co-workers.  And they are so moist and tasty (I would know, I've sampled a lot of them...) that I'm sure I'll be doing a lot of them in the time to come.  I can't wait to do them in pastels for some Easter baskets.  How cute are these? 






And for those of you who have asked about non-cupcake treats that can be shipped-- these are definitely one of them.  I'll post something soon about treats available for people outside of Utah County.

Get Well Soon

This week I made some "Get Well Soon" cupcakes that I can only hope did their part to help their sick owner feel a bit better.  Although I don't know the woman they were for or any details of her ailment, I believe wholeheartedly in the healing power of the cupcake, so I'm sure they lifted her spirit and her stomach.
